How to Make a Skinny Margarita

It’s a surprisingly beautiful day to still be in the throes of Winter.  Maybe too beautiful.  The after work crowd is just starting to crescendo across your bar when the question comes.  ‘Do you know how to make a skinny margarita?’  It hits your ear with the subtlety of a hammer.  Spring has sprung my friend and it’s on a DIET.  And this diet is different see because on this diet you can’t have any sugar…EVER.  So take a deep breath and remember, this too shall pass.

Grab a highball or rocks glass and take a lime/lemon wedge and run it around the rim.

Dip the dampened rim into a plate of Kosher Salt. (unless the customer has specified it without a salted rim)

Set the glass aside.

Grab a cocktail shaker or a highball glass that holds about 9-12 ounces.  Fill either with ice.

Add in 1 ½ oz. of blanco or silver tequila. (It’s the clear looking bottle of tequila that you thought was Barcardi for a second.)

Add ½ oz.-3/4 oz. of Triple Sec (This will be down in the well of bottles set near ice and a soda gun.)

Grab enough lemon and lime wedges to equal 3 whole lemons and 3 whole limes.  Now grab the elbow/hand juicer and Get Squeezing.

Next take half a navel orange and squeeze it into the drink. (A dash of Orange Juice may be permissible, but check with the customer.)

Shake ingredients vigorously for 10-12 seconds. Dilution is your friend here, so shake it till you make it.

Grab your salt rimmed, or not, glass and fill it with ice.

Strain your shaken ingredients into the ice filled glass.

Garnish with a wedge of lemon or lime or both and a straw.

Now go forth and conquer!
